I'm not a summer person. Whilst most people I know are relishing every moment of sun they get, I prefer to hide away and employ any device I can to keep cool. So summer heat? nope. But summer food? Keep it coming! Two of my favourites are coconut and lime. I love how the refreshing citrus scent lingers on my fingers and throughout my kitchen after making these baked doughnuts. Hope you enjoy this extremely quick and easy recipe.

130ml coconut milk
1 large egg
2 tbsp olive oil
125g plain flour
1 tsp baking powder
Salt
75g white caster sugar
3 limes
150g icing sugar
1 tbsp desiccated coconut

Pre-heat the oven to 180°C. In one bowl, whisk together the wet ingredients for the doughnuts (130ml coconut milk, 1 large egg and 2 tbsp olive oil). In another bowl, combine the dry ingredients (125g plain flour, 1 tsp baking powder, a pinch of salt, 75g white caster sugar and the zest of 2 limes). Fold the dry mix into the wet, but take care not to over-mix. Fill 6 doughnut moulds and bake for 10 minutes. Leave to cool on a rack.

Add the juice of half a lime to 150g icing sugar, and spoon this glaze over each doughnut. Garnish with zest from one lime and a sprinkle of desiccated coconut.
