I am not a summer creature. While most people around me are relishing the heat, I'm just a ball of hay-feverish mess, dreaming of cozy jumpers and crackling fireplaces. Still, these ice lollies help... a lot. I might have to make many, many more to survive the season.
2 tsp balsamic vinegar
300ml coconut milk
1 tsp vanilla extract
Halve 350g strawberries, remove stalks and spread across a baking tray. Drizzle with 2 tsp balsamic vinegar and roast at 170°C for 20 minutes until the strawberries are soft. Leave to cool completely. Add 50ml honey and mash up with a fork. Divide the strawberry mix equally between ice lolly moulds.
In a bowl, combine 300ml coconut milk, 50ml honey and 1 tsp vanilla extract. Pour into ice lolly moulds and pop into freezer. After 30 minutes, add the ice lolly sticks to the moulds and continue to freeze overnight.
