Rosemary and Sea Salt Brownies

When you realise you have all the ingredients for rosemary and sea salt brownies to hand, it's practical criminal not to act on it, right?! Recipe adapted from Baked The Blog.

10 tbsp coconut oil
120g brown sugar
2 tbsp honey
90g cocoa powder
1 tsp finely chopped rosemary
Sea salt
1 tsp vanilla extract
2 large eggs
65g plain flour
100g melted dark chocolate

Preheat oven to 160°C. Mix 10tbsp coconut oil, 120g sugar, 2 tbsp honey, 90g cocoa powder, 1tsp rosemary, 1tsp vanilla extract and a pinch of sea salt in a bowl. Whisk in 2 eggs (one at a time) then fold in 65g plain flour. Spread the mix onto a tray and bake for 20 minutes. Drizzle with 100g melted dark chocolate and sprinkle with sea salt flakes.
