Sugar Popovers

I made sugar popovers because it's cold outside. That's enough of a reason, right? The best thing about these babies is that I always have the necessary ingredients ready in my kitchen. They're dangerously simple and quick to make.

240ml whole milk
2 large eggs
1 tsp vanilla extract
125g plain flour
Pinch of salt
60g unsalted butter, melted
60g caster sugar

Preheat your oven to 220°C and line 15 cupcake holders with a little melted butter. Whisk together 240ml whole milk, 2 large eggs and 1 tsp vanilla extract until smooth. Add 125g plain flour and a pinch of salt to the wet ingredients and whisk. Spoon 3 tbsp of the mix into each cupcake holder, and bake at 220°C for 12 minutes. Turn the oven down to 175°C and bake for another 12 minutes. Drizzle melted butter on each popover and sprinkle generously with caster sugar. Serve while warm.
