Salted Chocolate and Coffee Cookies

The combination of dark chocolate and coffee is so irresistible to me. This recipe for 12 cookies has been adapted from My Daily Morsel.

1 tbsp espresso powder
55g butter, grated
180g dark chocolate, roughly chopped
1 large egg
65g caster sugar
½ tsp vanilla extract
30g plain flour
1 tsp baking powder
Maldon salt

Preheat oven to 150°C. Add 1 tbsp espresso powder and 55g grated butter to 180g dark chocolate. Slowly melt the mixture in a bowl over simmering water until smooth and glossy, then cool. Add 1 large egg, 65g caster sugar and ½ tsp vanilla extract. Whisk 30g plain flour with 1 tsp baking powder and a pinch of salt into the mix. Leave the combined mix in the fridge overnight. Space tablespoon-sized scoops of the cookie mix along a baking tray. Cook for 10 minutes then sprinkle with a little Maldon salt.
