Speculoos Banana Bread

I've been travelling to Brussels quite a bit, and am really warming to the charming city. Good eats, interesting architecture, friendly people - what's not to love? One discovery has been Speculoos - a Belgian biscuit spiced with cinnamon, ginger, cloves, cardamom and nutmeg. I added a big heap of Speculoos spread to a banana bread recipe... and voila! This baby is moreish and so darn Christmassy.

250g plain flour
½ tsp baking soda
½ tsp salt
3 ripe bananas
100g granulated sugar
100g brown sugar
3 heaped tbsp Speculoos spread
70ml milk
50ml vegetable oil
2 eggs
1 tsp vanilla extract

Preheat your oven to 150°C and butter the sides of a non-stick loaf tin. Mix together 250g plain flour, ½ tsp baking soda and ½ tsp salt and set aside. In another bowl, mash 3 ripe bananas. Add 100g granulated sugar, 100g brown sugar, 3 heaped tbsp Speculoos spread, 70ml milk, 50ml vegetable oil, 1 tsp vanilla extract and 2 eggs. Pour the banana mix into the flour mix and fold until just combined. Bake in the loaf tin for 1 hour. Wait until the bread is completely cool before slicing.
